Cooking

So in the past year, in an attempt to eat better and save money, I have been cooking at home. When I was in England we pretty much ate at home every night, and the family we lived with was on a gluten-free, sugar-free diet. Not that I ate that way the entire time, but doing so made me think more about the way I eat and all the added stuff on food when I eat out.

Today I was cooking a meal for a family in my hope group who's grandma passed away. The mom had left to go overseas to be with her family in this hard time, so it's just dad and kids at home. I decided to make chicken, rice and green beans. After I was done, I wasn't thrilled with it. I mean it looked great, but I wanted to keep going. So I made some Betty Crocker cookie bar brownies. I haven't had them yet, but they looked lovely! This just made me realize how much I love serving people in this capacity.

As I was spicing the chicken up, I realized how I NEVER put salt or pepper on things I make anymore. Not that I don't eat it, but usually recipes I've done don't mention it so I don't do it. But it was a lot of fun to put them on these chicken breasts, and some thyme and garlic powder. I felt like a chef! On our Christian radio station they've been talking about the "fititudes" and how they're like the beatitudes. They've also dubbed this month "March into fitness." I feel like a lot of people lately are talking about health, etc. which is so cool because our culture can be a little sedentary. For the past month I've really stepped it up with being aware of the amount I consume, what I'm consuming, and being faithful to working out everyday...I've enjoyed the increased energy and just my mindset these past few weeks. I feel great!!

Out of that I've been sleeping a lot better, haven't been getting those "need of a nap" moments, and have even (don't be shocked) finished a chapter of my thesis!!! 2 down, 3 to go. I want to finish the longest chapter (Ch. 4 - Findings, approx 20-60 pages) by the time I leave for Spring Break.

Ok well I better get going to work. I guess I have a lot more to say about cooking and living a healthy life than I thought!!

  2. Go Danielle Go! You should get you a Jamie Oliver cookbook--super famous British chef, but also popular stateside. We've got one of his-we love it. :)
